Step 1: Prepared Cookies
- In a large bowl, combine butter, eggs, sugar, vanilla extract, and almond extract using an electric mixer or stand mixer on high speed until light and fluffy.
- In another bowl, combine flour, baking powder, baking soda and salt
- Stir flour into butter mixer until well blended
- Cover bowl with plastic wrap and chill for 2 hours
- Set oven to 400° F
- Line cookie sheet with parchment paper (do not grease)
- On a lightly floured surface, roll out dough into ¼-inch thickness
- Cut into desired shape using cookie cutter. To get effect as pictured, use a standard heart-shaped cookie cutter, than take a mini version of the same cookie cutter and shake out the smaller heart and remove from center. Keep this and bake to use a décor or as a snack.
- Place cookies 2- inches apart on cookie sheet.
- Bake 4-6 minutes until lightly brown
- Remove cookies to wire racks and cool completely before using.
Step 2: Make Whipped Cream
- Set bowl and whisk (or whisk attachment) in the freezer for 10- 15 minutes
- Add heavy cream, powdered sugar and vanilla into bowl. Mix together on medium-high speed.
- Whisk until the cream reaches stiff peaks
- A stiff peak will stand straight up when the beaters are lifted or removed
- Right before the cream reaches stiff peaks add a few generous drops of whatever food dye you like. The color will dilute while being mixed.
Step 3: Assembly
- Add whipped cream or cool whip into a pipping bag or a sandwich zip lock bag
- Snip a corner of the bag
- Start with a cookie as your base and pipe a dot of whipped cream until the whole cookie is covered. Stack a cookie on top of the just piped cookie. Repeat this 1-2 more times. At the top base, decorate with sprinkles, fresh fruit and leftover mini cookies.
- Optional: Dip your mini baked cookie in melted chocolate. Let cool. Use as decoration.
